Meat yields and chemical composition of muscle in New Zealand

Forty four feral males, 30 Saanen males and 20 Saanen females,
all yearling or younger, were slaughtered and their chemical and
dissectible composition determined. The ferals, reared on hill country,
were leaner than the Saanens reared on better grazing. Females tended
to be fatter than males in most measures of fatness. All three groups
were low in fat, both total chemical fat, and dissected fat in the leg.
The fat content of lean tissue was extremely low.
